Рецепт для воскресного завтрака: запеченные яйца-пашот с голландским соусом
Когда яичница и омлет выглядят слишком простым вариантом для завтрака, а душа (точнее желудок) все же требует высокобелковое утреннее блюдо — вспомните про яйцо-пашот. Как его приготовить с голландским соусом и подать с французской булочкой бриош, рассказывает HELLO.RU.
Ингредиенты:
Мягкая булочка (бриош) — 1 шт.
Яйца — 5 шт.
Сыр и ветчина — для начинки
Сливочное масло — 100 г
Лимонный сок — 35-40 мл
Соль, свежемолотый перец — по вкусу
Способ приготовления:
1. Разрежьте булочку пополам и подрумяньте на сухой сковороде.
2. Налейте в небольшую кастрюлю воду, добавьте немного лимонного сока, поставьте на огонь и доведите до кипения.
3. Для приготовления голландского соуса положите в миску три желтка и добавьте лимонный сок (25 мл). Поставьте миску на кастрюлю с кипящей водой (важно, чтобы миска не касалась поверхности воды).
4. Взбивайте желтки с лимонным соком венчиком около 5 минут, пока они не станут пышными. Начните вливать растопленное масло тонкой струйкой, продолжая взбивать. Когда соус загустеет, снимите его с водяной бани, посолите и поперчите. Оставьте остужаться.
5. Два оставшихся яйца разбейте в отдельные небольшие миски. Вода с лимонным соком не должна кипеть, поэтому поставьте ее на медленный огонь.
6. Ложкой сделайте в воде воронку и влейте туда одно яйцо. Варите его около 3,5 минут (в зависимости от размера яйца). Достаньте шумовкой. Проделайте то же самое со вторым яйцом.
7. На поджаренные половины булочек положите начинку по вкусу — мы предлагаем поджаренную ветчину и сыр или припущенный со сливками шпинат и слабосоленого лосося.
8. Сверху выложите яйцо-пашот. Полейте голландским соусом.
9. Разогрейте духовку в режиме «гриль» до максимума (220 г). Поставьте булочки с яйцом и соусом максимально близко к грилю на 30-45 секунд (яйцо не должно свариться).
10. Подавайте блюдо с зеленым салатом или запеченным картофелем.
