На прошлой неделе в Суздале состоялась презентация новой книги издательства «Эксмо» — «Вкус лета. Невероятные рецепты варенья, солений и других деликатесов из погребов Золотого кольца». Место для знакомства с книгой было выбрано неслучайно — именно там в своем доме по традиции проводит лето ее автор Евгения Дымова (Зеленская), в прошлом переводчик, а сегодня — владелица и идейный вдохновитель популярного в городе ресторана «Гостиный двор» и фабрики «Дымов-Керамика», а также жена известного предпринимателя Вадима Дымова.
Евгения Дымова со своей книгой «Вкус лета»
Журналистов, в числе которых оказался и редактор HELLO.RU, Евгения пригласила в свой ресторан, который многое рассказал о хозяйке еще до ее появления. Подъезжая к заведению, почти моментально узнаешь место: тут проходили съемки известной советской комедии «Женитьба Бальзаминова». Переступая порог ресторана, оказываешься в гостях у близких людей — настолько душевная там царит атмосфера, а интерьер изобилует до боли знакомыми каждому русскому человеку вещицами и предметами: баранки, развешанные на светильниках в виде алюминиевых ведер, самовары на столах, ковер на стене, зеркало в тяжелой деревянной раме, как у бабушки в деревне, гирлянда из разноцветных флажков и старинных открыток, растянувшаяся под потолком… Неудивительно, что в пик туристического сезона тут полная посадка, причем гости — преимущественно иностранцы. Кому не хочется отведать авторскую русскую кухню — крепкий борщ с чесночными пампушками, щучьи котлеты с гречкой, пельмени с кроликом, сбитень и многое другое?

Евгения Дымова презентует журналистам свою книгу
Так как дорога из Москвы вместо ожидаемых 3,5 часов заняла у нас чуть ли не все 5, нам предложили сначала отобедать и оценить на вкус те специалитеты, рецепты которых представлены в книге. Со столов были мгновенно сметены бутерброды с паштетом из кролика, лечо, маринованные томаты и огурчики, а на десерт мы за обе щеки уплетали мороженое с ягодными вареньями-смузи, приготовленными при нас шеф-поваром ресторана.
Далее последовало непосредственное знакомство с Евгенией Дымовой и ее книгой, вошедшей в серию «Секреты русской кухни: рецепты с историей», созданную к 50-летнему юбилею туристического маршрута «Золотое кольцо России».
Если ничего не знать о Евгении заранее, то легко поддаться стереотипам и представить, что автор книги — домохозяйка в возрасте, большую часть своего времени проводящая в огороде и на кухне. Но разрыв шаблона происходит, как только Евгения появляется перед вами — молодая, энергичная, обаятельная, стильная, заядлая путешественница и желанная гостья многих светских мероприятий, вдруг говорит, что «варить варенье и закатывать банки с овощными заготовками — не удел деревенских жителей, это здорово и модно!» Сомневаться в этом как-то сложно, особенно после дегустации — хочется тоже «сохранить» в банках лето.
По словам Евгении, в ее личный топ-5 заготовок (она обязательно делает это каждый год) входят лечо, черничный конфитюр, апельсиновое варенье, баклажаны с болгарским перцем и варенье из крыжовника, рецепты которых, конечно же, можно найти в книге. В нее же вошли и секреты приготовления нескольких интересных заготовок от суздальских соседей Евгении — шеф-поваров лучших ресторанов в городе и хозяев гостевых домов.

В книге есть как рецепты привычных блюд — клубничного и черничного варенья, компота из красной смородины, тушенки из говядины, маринованных помидоров, лечо, томатной пасты и малосольных огурчиков, так и довольно необычные варианты. Вы узнаете, как приготовить апельсиновое варенье, медовые ягодные муссы, малиновый джем или варенье из крыжовника, не требующие варки, варенье из огурца или молодых сосновых шишек, два варианта горлодера, луковый чатни, сливочный хрен с четверговой солью, щаницу и многое другое.
Сегодня HELLO.RU делится с читателями рецептами любимого Евгенией лечо, который, по ее мнению, легко занял бы первое место на конкурсе «Лучшее лечо России» (если бы такой проводился в нашей стране); очень популярного на Руси, но немного забытого в последнее время — горлодера, и варенья из огурца — для любителей кулинарных экспериментов и необычных вкусовых сочетаний.
Лечо
Ингредиенты:
Спелые помидоры — 3 кг
Сладкий красный перец — 1,5 кг
Растительное масло — 200 мл
Сахар — 200 г
Соль — 2 ст.л.
Уксусная эссенция крепостью 70 процентов — 1 ч.л.
Приготовление:
1. Помидоры вымойте и пропустите через мясорубку. Полученную массу переложите в большую кастрюлю, поставьте на огонь, доведите до кипения и варите 20 минут.
2. У сладкого перца удалите плодоножки, семена и белые перегородки. Нарежьте перец небольшими квадратиками и выложите в горячую помидорную массу.
3. Добавьте растительное масло, сахар и соль.
4. Варите еще 30 минут. За 2 минуты до готовности влейте в лечо уксусную эссенцию, перемешайте и выключите огонь.
5. Разложите лечо в стерилизованные банки и закатайте крышками. Переверните банки и дайте остыть.
Огуречно-яблочное варенье
Игредиенты:
Огурцы — 600 г
Яблоки (любые) — 400 г
Сахар — 500 г
Лимон — 1 шт.
Молотая корица — 10 г
Приготовление:
1. Вымытые огурцы и яблоки нарежьте кубиками со стороной 1 см, выложите в кастрюлю и засыпьте сахаром на 2-3 часа, чтобы дали сок.
2. Затем поставьте на огонь и доведите до кипения, добавьте выжатый из лимона сок и варите при слабом кипении 10 минут. Снимите с огня, дайте остыть. Повторите процесс еще раз, то есть всего трижды нагревайте и остужайте варенье.
3. При третьем нагреве добавьте корицу, перемешайте и не остужая разложите варенье в стерилизованные банки и укупорьте.
Горлодер по-суздальски
Ингредиенты:
Спелые помидоры — 1 кг
Корень хрена — 100 г
Чеснок — 10-12 зубчиков (количество можно изменять по вкусу. Обычная порция: на 1 помидор — 1 зубчик чеснока)
Соль
Молотый острый красный перец — для любителей очень острых ощущений
Приготовление:
1. Помидоры и очищенные хрен и чеснок вымойте, обсушите.
2. Измельчите их любым способом (с помощью блендера или пропустив через мясорубку), посолите по вкусу и перемешайте.
3. Переложите в стерилизованные банки и накройте пластиковыми крышками. Дайте настояться несколько часов.
4. Вкус раскроется через 1-2 часа, когда растворится соль и разойдутся хрен и чеснок. Храните в холодильнике.
