Простой омлет может стать блюдом высокой кухни, если сопроводить яйца оригинальными ингредиентами — например, кальмаром, зеленым яблоком и хрустящим луком. Рецептом нового рецепта для завтрака делится шеф-повар кафе «Мечтатели» Виктор Гусев.
Ингредиенты:
Кальмар — 70 г
Сливочное масло — 10 г
Растительное масло — 15 г
Зеленое яблоко — 20 г
Яйцо — 3 шт
Сливки 22-процентные — 100 мл
Луковица — 1 шт
Соль — 1/4 ст. л.
Мука пшеничная — 1 ст. л.
Растительное масло — 50 мл
Способ приготовления:
1. Приготовить хрустящий лук: нарезать луковицу полукольцами, разобрать, обвалять в муке и соли (необходимо сделать так, чтобы каждый ломтик был припудрен). В глубокой сковороде на среднем огне разогреть растительное масло, добавить лук, обжарить до золотисто-коричневого цвета и хрустящего состояния. После жарки лук необходимо положить на бумажные полотенца и дать стечь маслу.
2. На раскаленной сковороде быстро, в течение 10 секунд, обжечь мясо кальмара, добавить смесь из яиц и сливок, довести до вкуса солью и перцем, тщательно перемешать и добавить хрустящий лук. Выложить готовое блюдо на тарелку, сверху посыпать тертым подмороженным яблоком.
