Как приготовить гаспачо с сыром, салат с палтусом и бакинскими помидорами и аппетитную брускетту с томатами и авокадо, рассказывают шеф-повара известных московских ресторанов.
Гаспачо из томатов с сыром
Ингредиенты:
Соус спайси — 40 г
Лук зеленый — 16 г
Масло оливковое — 40 г
Помидоры — 200 г
Сыр буррата — 200 г
Томаты в собственном соку- 500 г
Сок томатный — 200 г
Огурцы- 50 г
Хлеб — 30 г
Клубника — 40 г
Лук репчатый — 15 г
Уксус столовый — 5 г
Масло оливковое — 10 г
Соль — 5 г
Сахар — 10 г
Способ приготовления:
Все ингредиенты для гаспачо взбить блендером до однородной массы и процедить. Добавить оливковое масло, соль и сахар, перемешать. Отдельно приготовить салат из томатов, зеленого лука и заправить соусом спайси. Подавать гаспачо с салатом из томатов и сыром буррата.

Брускетта с авокадо и томатами
Ингредиенты:
Хлеб — 1 большой кусок
Авокадо — 1/2 шт.
Помидор розовый — 2 шт.
Укроп — 3 г
Лук-шалот — 3 г
Масло оливковое — 30 г
Способ приготовления:
Хлеб запечь в тостере. Помидор нарезать мелкими кубиками и смешать с укропом. Авокадо нарезать мелкими кубиками и смешать с луком-шалотом. Авокадо и помидор смешать с оливковым маслом по отдельности. На теплый хлеб выложить сначала авокадо, затем помидоры.

Салат из палтуса с бакинскими помидорами
Ингредиенты:
Палтус — 100 г
Лук красный — 10 г
Помидоры бакинские — 60 г
Укроп — 5 г
Лимонный фреш — 5 мл
Мед — 5 г
Соль — 2 г
Способ приготовления:
Филе палтуса нарежьте тонкими слайсами, посолите и оставьте на 45 минут. Для приготовления соуса смешайте растительное масло, сок лимона и мед. Затем выложите в центр тарелки крупно нарезанные помидоры, сверху — кусочки слабосоленого палтуса, крупно нарезанный красный лук и укроп. Заправьте соусом и хорошо перемешайте.
