Вкус Индии: рецепт курицы в имбирно-чесночном соусе Мург-махани
Почувствовать колорит Индии, познакомившись с аутентичной остро-пряной кухней, можно не выезжая за пределы Москвы. В баре «Консерватория» на 10-м этаже Ararat Park Hyatt Moscow представлено новое индийское меню. С 23 мая до 3 июня гости смогут попробовать различные экзотические блюда, приготовленные по фирменным рецептам в настоящем тандыре, привезенном из Индии.
Новое меню призвано познакомить искушенную публику с разнообразными блюдами кухни индийского региона Пенджаб. Среди интересных позиций — «Роган-джош» (баранина карри с кашмирским перцем), «Джинга латпата» (креветки, томаты, луковый соус), «Овощная пакора» (темпура из овощей в индийском стиле) и многое другое.
С читателями HELLO.RU су-шеф заведения поделился рецептом блюда «Мург-махани» с курицей в имбирно-чесночной заправке.
Ингредиенты:
куриное бедро без кости и кожи — 2 кг
Для первого маринада:
имбирно-чесночная паста — 150 г
лимонный сок — 40 мл
паста из красного чили — 50 г
пудра из чили перца — 10 г
пудра гарам массала — 10 г
Соль по вкусу
Для второго маринада:
йогурт натуральный — 500 г
сливочный сыр — 250 г
белый перец — 15 г
черная соль — 15 г
карри пудра — 50 г
Для соуса:
консервированные томаты без кожицы — 500 г
жареные орехи кешью (паста) — 75 г
сахар — 40 г
паста из имбиря и чеснока — 30 г
пудра из красного чили перца — 5 г
масло сливочное — 70 г
сливки — 100 г
гара массала — 5 г
Гвоздика, кардамон, корица (палочки), лавровый лист
Способ приготовления:
1. Мариновать курицу в первом маринаде 30 минут, затем во втором — еще 3 часа. Обжарить куриное мясо на углях.
2. Смешать томаты в блендере до пюрообразного состояния и поставить на медленный огонь, добавить чесночно-имбирное пюре, немного чили пудры, сливочное масло и все оставшиеся специи, завернутые в марлю (чтобы потом легче извлечь). Варить на медленном огне около 1,5 часов (чтобы выпарилось 1/2 соуса). За 10 минут до приготовления добавить пасту из орехов и мед, довести до вкуса при помощи соли и перца. Подавать курицу в соусе.
