Рецепт для воскресного завтрака: яйцо-бенедикт со шпинатом

HELLO.RU представляет новый рецепт для неспешного воскресного завтрака — яйцо-бенедикт со шпинатом. В основе этого блюда — классическое яйцо-пашот и голландский соус, для приготовления которых предстоит запастись терпением и аккуратностью. Но главное — затраченные усилия не останутся без вознаграждения!

Ингредиенты:

Яйцо куриное — 2 шт

Вино белое — 15 мл

Масло сливочное

Лимон

Хлеб сэндвичный — 1 шт

Икра тобико — 1/2 ч.л.

Шпинат — 80 гр

Соль

Уксус

Масло оливковое — 10 мл

Способ приготовления:

1. Готовим голландский соус. Отделите желтки от белков. Поместите желтки в миску, перемешайте и поставьте миску на водяную баню. Взбейте желтки венчиком. Примерно через 5 минут, когда желтки станут пышными, не переставая взбивать, начинайте добавлять масло тонкой струйкой. Когда соус загустеет, посолите его и поперчите, добавьте лимонный сок. Взбивайте еще 20-30 секунд.

2. Готовим яйцо-пашот в сотейнике с подсоленной водой и уксусом. Для этого разбиваем яйцо в небольшое сито, сцедив таким образом жидкий белок. В закипевшую воду добавляем пару капель уксуса (столовый — 9%), после чего уменьшаем огонь до минимума и опускаем яйцо на 3,5 минуты. Вынимаем яйцо из сита и просушиваем на салфетке.

3. На предварительно разогретой сковороде обжариваем шпинат на оливковом масле и немного подсаливаем. Параллельно обжариваем тостовый хлеб.

4. Выкладываем на тост обжаренный шпинат, затем яйцо-пашот, поливаем соусом и посыпаем икрой-тобико. Украшаем зеленью и поливаем оливковым маслом.
