Сытный ужин: хачапури с черным трюфелем

Марафон грузинских блюд на HELLO.RU продолжается! Мы уже делились с вами 5 вариантами ужина «с акцентом»: от цыпленка чкмерули до оджахури из телятины. А сегодня рассказываем, как приготовить коронное грузинское блюдо — хачапури — с добавлением оригинального ингредиента — черных трюфелей.
Ингредиенты (для 4-х хачапури):
Для теста
Просеянная мука — 1 кг
Сахар — 10 г
Соль — 15 г
Дрожжи сухие — 11 г
Масло подсолнечное — 30 г
Масло сливочное — 50 г
Молоко — 350 г
Вода — 350 г
Для начинки
Паста трюфельная — 20 г
Сыр имеретинский — 75 г
Сыр сулугуни — 125 г
Ветчина — 20 г
Яйца — 1 желток
Сливки — 10 г
Способ приготовления:
1. Молоко разбавляем теплой водой. Берем 100 граммов получившейся смеси и добавляем в нее сахар и дрожжи. Затем добавляем муку, размягченное масло и постепенно доливаем остальную воду. Вливаем растительное масло и ждем пока тесто поднимется.
2. После того, как тесто поднялось, перемешиваем его. Откладываем в сторону, затем еще раз перемешиваем через полчаса. Делим тесто на 4 части.
3. Для приготовления начинки берем два вида сыра, измельчаем и смешиваем с трюфельной пастой и ветчиной. Выкладываем начинку на тесто.
4. Смесью из желтка и сливок обмазываем хачапури сверху.
5. Кладем тесто в разогретую до 260 градусов духовку. Добавляем тонко нарезанные ломтики сыра, посыпаем трюфелем.
