Пасхальный рецепт: как приготовить апулийский кулич скарчелла
Согласно религиозным традициям уже завтра, 13 апреля, в чистый четверг, верующие должны начать подготовку к пасхальному ужину. Если вы до сих пор не определились, покупать кулич или приготовить его самостоятельно, предлагаем сделать выбор в пользу последней возможности. При этом попробовать немного поэкспериментировать и приготовить кулич с итальянским акцентом.
Шеф-повар ресторана Villa Rosa Лучано Казале делится рецептом скарчеллы — традиционного кулича итальянского региона Апулия. Отличает его от обычного не только форма и внешний вид, но и наличие оригинальных ингредиентов. Скарчелла готовится из сдобного теста с добавлением цедры лимона и апельсина, оливкового масла и… отварных яиц, которые кладут в блюдо прямо в скорлупе!
Ингредиенты:
Мука — 500 г
Сахар — 150 г
Оливковое масло — 50 мл
Растительное масло — 50 мл
Яйца — 3 шт
Молоко — 150 мл
Цедра апельсина — 5 г
Цедра лимона — 5 г
Экстракт ванили — 5 г
Разрыхлитель для теста — 10 г
Соль — 1 г
Цветная посыпка — 4 г
Приготовление:
1. Одно яйцо сварить вкрутую, второе — слегка взбить. Отложить.
2. Третье яйцо разбить в миску и смешать с растительным и оливковым маслом, сахаром, молоком, цедрой апельсина и лимона, экстрактом ванили, солью и разрыхлителем. Самой последней в тесто ввести муку. Замесив тесто, поставить его на 30 минут в холодильник.
3. Придать тесту любую понравившуюся форму и выложить кулич на противень, простеленный кулинарным пергаментом. Скарчеллу выпекают в самых разных формах — от сложного барашка до простой корзинки.
4. Вставить в кулич вареное яйцо (в скорлупе), закрепив с помощью пластины теста. Обмазать тесто взбитым яйцом и украсить цветной посыпкой.
5. Выпекать в духовке, разогретой до 160-180 градусов в течение 10-15 минут.
